Hey guys! Hope you all had a great weekend! I’m really enjoying this meal planning thing. We stuck to our meal plan last week, with only a couple of minor changes, so it’s working out really well. It has taken a lot of the stress out of cooking to know what we are going to have for each meal, and having what we need to make those meals ahead of time.
We did eat out a couple of times this past weekend. I figured that we would on Friday, but Saturday was an unplanned take-out night. We were supposed to have grain-free chicken enchiladas on Saturday, but that ended up moving to Sunday night.
Sunday afternoon, I did some prep work for the week. I have the Paleo Spinach Pesto, Avocado Cilantro Basil dressing, and tomato sauce all in the fridge ready to go.
Sunday
Brunch: Spinach Omelets
Dinner: Grain-Free Chicken Enchiladas
Monday
Lunch: Green Eggs and Turkey Sandwiches
Dinner: Pesto Bacon Wrapped Meatloaf Rounds (using Paleo Spinach Pesto instead of what recipe calls for)
Tuesday
Lunch: Tuna White Bean Salad w/ Avocado Basil Pesto ( test recipe)
Dinner: Leftovers from Monday night
Wednesday
Lunch: Sweet Potato & Spinach Chicken Patties w/ steamed broccoli
Dinner: Salmon Cakes (planning to try something new with them) w/ green beans
Thursday
Lunch: Leftover salmon cakes
Dinner: Leftover Chicken Patties
Friday
Lunch: Spicy Meat Sauce over Zucchini “pasta”
Dinner: Grain-free Sausage Pizza w/ Cauliflower Crust
Saturday
Lunch: Leftovers

You are so smart to do such good meal planning. I know I need to do more of it to cut down on stress, trips to the store, and food waste. Very good of you to get some of the prep done over the weekend. Last night we had grilled vegetables (cauliflower and zucchini) and a big green salad with cherry tomatoes and some kidney beans (for protein). Tonight? One of my teens is cooking and wants to make vegetable fried rice– not something I’d normally pick, but if I’m not the chef, I’m game (it will be brown rice at least). And I specified that some of our fresh fruit, either the peaches, apricots, or strawberries, will also need to be used up. The rest of the week? Not sure. Probably at least one frittata. And there are lots more fruits and veggies to use up.
